This is recipe so easy and extremely refreshing on a hot summer day. I love the vibrant colors and versatility of this dish because it can pretty much go with anything for any occasion. Enjoy!
2 medium heirloom tomatoes (diced)
2 tbsp fresh basil (chopped) or to taste
1/2 tbsp balsamic vinegar
1 tbsp olive oil
1/4 cup red onion (diced)
1/2 or 1 avocado (diced)
kosher or celtic sea salt to taste
Chop up the tomatoes and put in a large bowl add the remaining ingredients and mix in the oil until completely blended. Add salt to taste.
Pair this with chips, green salad (my personal favorite), or fresh baked bread as a bruschetta.
