Last weekend, I attended an awesome event known as Plant Stock. All the top thought leaders in plant-based nutrition were in attendance to support the Engine 2 diet plan that was originally featured in the film, Forks Over Knives. I was truly inspired by Rip Esselstyn, the founder of the Engine 2 diet and his family: his parents Dr. Caldwell Esselstyn, an esteemed cardiologist, and Ann Crile Esselstyn, a wonderful plant-based cook. His sister, Jane Esselstyn, was also in attendance. Ann and Jane were promoting the pending release of their new book; The Prevent and Reverse Heart Disease Cookbook. The food served were all recipes from the book and were absolutely filling and delicious. There were various presentations from medical experts endorsing a plant-based diet, with the resounding message that centered around incorporating more green leaf vegetables, fruits, and whole grains into your diet to to ward off chronic diseases and live a vital, fulfilling life. Diabetes and heart disease were the main topics as well as tackling the psychological hurdles of standing out as a plant-based eater.
There were also vendors selling some wonderful natural products. One of my favorites was the balsamic vinegar stand that featured sweet to savory flavors for all cooking needs. As you can see above, I went a little crazy and bought 4 different flavors including chocolate raspberry, smoke, sesame ginger, and garlic cilantro. These vinegars are ideal for seasoning food when you’re practicing the Engine 2 diet, which does not encourage cooking with any oil or salt. They’re also just plain delicious in their own right! I recommend topping off your meal with one of these yummy flavors as opposed to cooking with them, as some are heat sensitive. The name of company is Bema & Pa’s. Check them out and enjoy!
